Recipe: Crockpot BBQ Pulled Pork Sandwiches

 This recipe is my husband's new favorite! He is a very picky eater so it can be hard to come up with a dinner that he will actually eat and enjoy.I am all about EASY meals that do not have a lot of ingredients or prep work. This BBQ Pulled Pork recipe only calls for 3 ingredients, well 4 I guess including the pork, and it can be put into the crockpot to slow cook all day. I love being able to throw stuff in the crockpot in the morning and then not have to worry about what we are having for dinner all day.

Here is what you will need to make your BBQ Pulled Pork:

  • Pork - It can be any type of pork roast, butt, shoulder, etc.
  • Diet Pepsi
  • 1 bottle BBQ Sauce {your preference}
  • Seasoning Salt {I prefer Lawry's}

First, add the Diet Pepsi into the crockpot. Depending on the size of the pork, 1 can should be enough. Then add some BBQ sauce. You can use as much  or as little BBQ sauce as you would like. I normally go through about 3/4 of a bottle for the entire recipe. I then sprinkle some of the seasoning salt into the crockpot before adding the pork. Next, coat the pork with the seasoning salt. I also add some more BBQ sauce on top of the pork. Depending on the size of the meat you will need to cook it for 4-6 hours on low.After a few hours, I take 2 forks and shred the pork. Since it has been cooking this long it should easily pull apart. You can then change the setting on the crockpot to warm and let the meat soak in all the flavor!Serve either on a bun, roll, pita, etc. YUM!
